Magic in a bowl


I made some French Onion soup today. It is pure magic in a bowl. Even Texas Calculatem can't do that! I added some mushrooms to the recipe. Not sure if it was a good choice or not as it gave the soup a strange sweetness. Anyway, hope you like the photo.

I'd leave out the mushrooms - the soup's great without them - croutons, you want croutons. :-)

Could you recommend a good croutons recipe? My Nigel Slater book suggests toasting the bread on one side, and then sprinkling grated cheese on the other side.

The sainted Delia (who is never wrong) says: Pre heat oven to 4 (180C). Drizzle olive oil on a large baking sheet. Cut up French bread into 1 inch cubes. Coat cubes on two opposite sides with the oil. 20 - 25 minutes in the oven (keep an eye on them as they can overcook easily).
